Pig Shots!!!!

These are the perfect party starter! Game day, family time, it don't matter. These are a guaranteed win!


Ingredients:

  • 1 package shredded cheddar (or cheese of your choice)

  • 1 8oz block of cream cheese

  • 1/4 cup diced jalapenos (can sub for canned chilis, pickled peppers etc)

  • BBQ rub of your choice

  • 1 package of bacon (don't use thick cut)

  • Toothpicks/Grilling pins


To make them:

  1. 1: Cut your Polish Kielbasa into 1/2 inch rings. Try to keep the cuts as uniform as possible as this is the base for your pig shots. Wrap your sausage discs with a half slice of bacon and secure with a toothpick.

  2. 2: Mix 1 package cream cheese with 1 package shredded cheddar (feel free to use whatever cheeses you want and like). Add in 1/4 cup diced jalapeños (any pepper of your choice works) and season with BBQ rub of your choice.

  3. Pipe mixture onto top of sausage/bacon cups and do not overfill as the mixture rises as it cooks. (if you don't have a pipe bag, place contents into a ziploc, push towards the corner and cut off the tip))

  4. 3: Place on smoker (or in oven) at 325-350 degrees for 35-45 mins. Check after 25 mins or so. They are done when the bacon is cooked and the cheese is melted!
