TriTip Sandwich with Herb Sauce

The burst of flavor you get with this TriTip Sandwich with Herb Sauce is bangin'.

  • 1 tri-tip

  • 2 tbsp fish sauce

  • 4 tbsp truffle rub

  • 1 large bunch parsley, chopped

  • 1 large bunch basil, julienne or chopped

  • 2 tbsp capers

  • 1 tbsp minced garlic

  • 1 tbsp Calabrian chilis

  • ¼ cup olive oil

  • ¼ cup vinegar

  • Salt and pepper to taste

  • Sourdough baguette

  • Havarti cheese


  1. Apply fish sauce as binder to tri-tip. Season with “truffle rub”. Hook it and hang it in Pit Barrel Cooker.

  2. While tri-tip cooks, combine chopped parsley, julienned basil, 2 tbsp capers, 1 tbsp minced garlic, 1 tbsp Calabrian chilis, ¼ cup olive oil, ¼ cup vinegar and salt and pepper to taste. Stir and let sit 15 minute before using.

  3. When tri tip is finished, let it rest at least 15 minutes before slicing. Slice as thin as possible against the grain.

  4. Place thinly sliced tri-tip on sliced sourdough baguette. Top with Havarti cheese. Place under broiler on high for 60-90 second to melt cheese. Top with sauce, assemble sandwich and enjoy!!
