Lemon Pepper Ribs

Lemon adds a great citrus acidity to these Lemon Pepper Ribs. It's a great flavor to try for anyone in the bangbangflavorgang!


INGREDIENTS:

  • 1 rack of St Louis cut ribs

  • 3-5 tbsp lemon pepper rub

  • 1 stick butter

  • ¼ cup fresh lemon juice

RECIPE:

  1. Preheat smoker to 250 degrees F. While smoker comes to temp, prep ribs.

  2. Remove membrane from back of ribs. Season with lemon pepper rub on top and lightly on the bone side. Place seasoned rack of ribs on the smoker and let them cook untouched for 1.5 hours.

  3. While ribs smoke, melt 1 stick of butter and then mix it with ¼ fresh lemon juice.

  4. After 90 minutes on the smoker, carefully baste ribs with lemon butter mixture. After an additional 30 minutes, baste them again. Finally, after another 30 minutes, baste one more time. Let cook for another 30 minutes.

  5. After 3 hours of total cook time, ribs are ready to be wrapped. Place meat side down in butcher paper or foil ( I prefer butcher paper for this cook) and wrap tightly. Place back on smoker meat side down and cook for 1 hour.

  6. After 1 hour, remove the ribs from the smoker and unwrap them. Place them back on smoker, meat side up and give them one last glazing of lemon butter mix. Cook for 15-20 minutes until glaze has set and ribs are 198-202 degrees F internal.
