Pork belly bites are always a banger. Throw in some homemade teriyaki sauce and you've got a treat that's hard to beat!
Ingredients:
1 slab pork belly
1 cup water,
1/2 cup soy sauce,
3 tbsp ginger,
3 tbsp garlic powder,
3 tbsp honey,
1/4 cup brown sugar,
1/4 cup cornstarch slurry
BBQ rub or seasoning of your choice
To Make:
Cut pork belly into cubes. Roughly 1 inch cubes work fine. Season with rub/seasoning of choice. Place on smoker at 250 degrees for 1.5-2 hours.
While pork belly cubes smoke, make teriyaki sauce. Combine water, soy sauce, ginger, garlic, honey, and brown sugar. Bring to a boil. Add in cornstarch slurry and lower to simmer. Simmer 5-10 mins until thickened and set sauce aside.
After 1.5 hours, check the color of the pork belly and make sure the seasoning has set (if it hasn't, go 20-30 mins more). Once set, place pork belly into a foil pan in an even layer and cover with foil. Place back on smoker, covered to steam and braise for an hour and a half.
Remove pork belly from smoker and uncover. Pour off excess fat. Pour in homemade teriyaki and toss to coat. Place back on smoker for 20-30 minutes to set sauce.
