Smackin' Swedish Meatballs

I promise these will be the best balls you ever put in your mouth.


Ingredients:

  • 1.5 pounds ground beef

  • 1 cup bread crumbs

  • 1/2 cup milk

  • 1/2 bunch parsley chopped

  • 1/2 teaspoon ground allspice

  • 1/2 onion finely diced

  • 1/2 onion grated

  • 2 tbsp Chuck's Flavor Train Garlic Pepper Rub (or 2 tbsp garlic powder, 1 tbsp pepper and 1 tbsp salt)

  • 1 egg

  • 1/2 stick butter

  • 2 tbsp flour

  • 2.5 cups beef broth

  • 3/4 cup heavy cream

  • 1 tbsp Worcestershire sauce

  • 1 tbsp mustard

  • 1 tbsp soy sauce

  • 1 tbsp fish sauce

(NOTE: All seasoning amounts are suggested starting points. Taste as you cook and tweak to your liking)

To Make:

  1. Combine bread crumbs, small amount of parsley, 1/4 teaspoon allspice, grated onion, garlic pepper rub(or garlic powder, pepper and salt) and egg. Mix until combined. Let sit 15 mins.

  2. Add beef. Gently combine all ingredients. Roll into smallish meatballs.

  3. Add 1/2 stick butter to a medium/high heat skillet. Add meatballs and cook turning continuously until brown on each side and almost cooked through. Remove from heat and set aside.

  4. Add onion and flour to skillet and whisk/stir until it turns light brown. Slowly whisk in beef broth and bring to a simmer. Let reduce slightly.

  5. Add in other 1/4 tsp allspice, mustard, Worcestershire sauce and heavy cream. Add in fish sauce and soy to elevate it and add a savory umami element.

  6. Add the meatballs back to the skillet and simmer for another 3-5 minutes to let the flavors mingle! minutes. Garnish with remaining parsley. Serve over mashed potatoes noodles or rice and enjoy!!!!
