Lemon Pepper Pork Belly Bites – pork and citrus have always been a perfect pair to me and this recipe only reinforced that!!!
INGREDIENTS:
1.5 slab of pork belly
½ cup Kosmos Q Lemon Pepper Wing Dust (separated)
1 cup water
¼ cup lemon juice
½ cup sugar
1 tablespoon cornstarch + 2 tablespoons cold water
RECIPE:
Cut your pork belly into roughly 1.5x1.5 inch cubes. Season With ¼ cup of Kosmos Q lemon pepper wing dust. Place them on the smoker at 275 and let them smoke away.
While the belly smokes, combine 1 cup water, ¼ cup lemon juice, ½ cup sugar, the remaining ¼ cup of lemon pepper wing dust and your cornstarch/water slurry. Let them simmer for 5 minutes until thickened and sticky. Remove from the heat and set aside.
After 2.5 hours, place your pork belly bites into a pan and cover them with foil. Smoke for an hour to tenderize and render the fat.
After an hour, remove the foil cover, pour off the rendered fat and pour our lemon pepper glaze over the top. Mix so all the bites are coated. Place them back on the smoker for 45-60 minutes to set the glaze. Enjoy!
