Bangin’ pork belly bites are flavor gang approved. Saucy and bossy, this snack smacks!
INGREDIENTS:
1.5 slab of pork belly
1 tablespoon 3 crabs fish sauce
3 tablespoons Gustus Vitae Japanese teriyaki seasoning
1 cup Oakland Dust Bay Area Banger Sauce
RECIPE:
Take your slab of belly and cut it into roughly 1.5x1.5 inch cubes. Lather them in fish sauce to bring some extra umami and to help the seasoning stick. Cover and smother them in your Japanese teriyaki rub.
Place the belly bites on your smoker at 275 degrees. Smoke them for 2.5 hours. After 2.5 hours, place them in a pan, cover it with foil and put it back on the smoker to render the fat. Cook for an hour.
After another hour, remove the lid from the belly bites and pour off any rendered fat. Add 1 cup of Bay Area Banger sauce and mix to combine. Place the belly bites back on the smoker and cook for one more until the sauce has set and become thick and sticky. Enjoy!
