Fried Chicken Sandwich

Fried Chicken Sandwich... Delicious? Yes. Satisfying? Without question. A step toward world peace? Some say it is so. All I’m gonna say is make it and judge for yourself.


INGREDIENTS

  • 4 boneless skinless chicken thighs

  • 2 cups buttermilk

  • 2 cups pickle juice

  • ¼ cup W Sauce

  • 2 cups flour

  • ¼ cup Cajun Two Step (or chicken seasoning of your choice)

  • ¼ cup  mayo

  • ¼ cup 5 monkeys bbq sauce (or sauce of your choice)

  • Dill pickle slices

  • Brioche buns


RECIPE:

  1. If your chicken thighs are extra thick, pound them out slightly. Combine buttermilk, pickle juice and W sauce in a bowl. Place the chicken thighs in the bowl and let them marinade for at least 2 hours.

  2. In a bowl, mix together flour and your Cajun Two Step or whatever seasoning you are using. Be sure to taste your flour.

  3. When chicken is done marinating, go straight from the marinade into the flour. Push the chicken in and make sure it’s properly coated and dredged on all sides. Set chicken aside on a wire rack.

  4. Fill your deep fryer or skillet with peanut or vegetable oil. Heat oil to 365. When oil is hot, gently place thighs in the fryer, working batches if needed. Cook 4-6 minutes until golden brown and cooked through.

  5. Toast your brioche buns. Spread sauce mixture on bottom bun, lay down thicken thigh, top with sliced pickles, more sauce and top bun. Enjoy!!!
