Elk with Blueberry Sauce


A delicious smoked elk rack served with a flavorful blueberry sauce.


INGREDIENTS:

  • 1 rack of elk, frenched

  • 2 cups blueberries

  • 1 cup red wine

  • ½ cup beef stock

  • ¼ cup brown sugar

  • 1 clove garlic, minced

  • 1 sprig rosemary

  • 2 tbsp “Bang Bang Flavor Gang” Rub

  • 4 tbsp olive oil


RECIPE:

  1. Coat elk with 2 tbsp olive oil and then season with “Bang Bang Flavor Gang” rub. 

  2. Place your seasoned rack of elk on your smoker at 225 for 35-45 mins. We will smoke it until it hits 115 degrees internally.

  3. While Elk smokes, prepare blueberry sauce. Combine 2 cups blueberries, 1 clove minced garlic, ½ cup beef stock, 1 cup red wine, ¼ cup brown sugar and 1 sprig rosemary in small saucepot. Bring to a simmer and then crush the blueberries with the back of the spoon or a potato masher.  Continue to simmer 10-15 minutes on low heat until reduced by a third. Remove from heat and set aside.

  4. When elk hits 115 degrees internal remove from smoker.

  5. Heat cast iron skillet to high heat and add 2 tbsp olive oil.  Place elk in cast iron and sear on high heat until 123 degrees internal.

  6. Let rest 5 mins before serving. Temp should climb to 127/128 after resting.

  7. Slice and serve with blueberry sauce.
