Curry Inspired Goat Leg

This Curry Inspired Goat Leg is a Flavor Train favorite! Gotta rub that all purpose rub all over the leg to give it bangbang flavor.


Cook time: 5 hours


INGREDIENTS:

  • 1 Goat leg

  • 1 can all purpose rub

  • 3 tbsp fish sauce

  • 1 can coconut milk

  • 2 cups beef broth

  • 1 white onion, sliced

  • 1 bell pepper, chopped

  • 2 inch knob of ginger, sliced

  • 2 sticks lemongrass

  • 3 tbsp minced garlic

RECIPE:

  1. Preheat smoker to 250-275.

  2. Score your goat leg. Apply fish sauce as a binder. Cover leg liberally (about a half a can) with all purpose rub.

  3. Place seasoned goat leg on smoker and cook 2.5 hours or until bark has formed.

  4. Place leg in a foil pan/roasting pan with bell pepper, garlic, onion, ginger, lemongrass, beef broth, coconut milk and 3 tbsp chucks dust. Cover and place back on the smoker.

  5. Cook covered lamb leg until the meat is fork tender and is pulling back from the bone. This took me a total of 2.5 hours.

  6. Remove lemongrass and ginger. Shred goat with fork or hands and serve over white rice.
