A comforting, flavorful dish of biscuits smothered in creamy sausage gravy.
INGREDIENTS:
1 package breakfast sausage
½ cup cream
½ cup buttermilk
1 cup milk
2 cups flour (plus two additional tablespoons flour)
2 tbsp honey
1 stick frozen butter
½ stick room temperature butter
2 tbsp baking powder
1 tsp salt
1 sprig fresh rosemary
1 sprig fresh thyme
RECIPE:
1 Combine 2 cups flour, 2 tbsp baking powder and 1 tsp salt in a large mixing bowl. Grate in 1 stick frozen butter. Stir to combine.
In a separate bowl or cup, mix ½ cup buttermilk and 2 tbps honey together. Stir buttermilk honey mixture into flour mixture. Mix to form dough.
Roll out dough until it is about ½ inch thick. Fold the dough over onto itself in thirds and then roll it out again. Repeat 2 more times but on the final time, roll dough into a 1-inch-thick rectangle. Cut dough into circles with a cookie cutter, sharp edged glass or even using a knife.
Bake at 400 for 8-10 mins.
While the biscuits bake, add 1 package breakfast sausage to skillet. Use a wooden spoon to stir and break up the sausage.
Once it has started to break down and brown, add in ½ stick butter, 2 tbsp flour and stir to combine and form a light roux. Stir in 1 cup milk and ½ cup heavy cream. Add in rosemary and thyme. Season to taste with salt and pepper.
Simmer on low heat for about 10 minutes or until thickened to your liking.
Serve over freshly baked biscuits.
