Rosso Dolce Lamb Shanks are tender, slow-braised lamb shanks infused with the rich flavors of Rosso Dolce wine, herbs, and aromatics. 🔥
INGREDIENTS:
2 lamb shanks
1 tsp kosher salt and pepper
2-3 tbsp olive oil
1 yellow onion, diced
3 garlic cloves, minced
1 cup celery, diced
½ cup carrot, diced
2 cups Roscato Rosso Dolce
8 oz tomato sauce
2 cups beef stock
3 tbsp Italian seasoning
1 bay leaf
1 small bunch thyme
1 sprig rosemary
Fresh chopped parsley, optional (garnish)
RECIPE:
Preheat your smoker to 275°F.
Season your lamb shanks with salt, pepper and Italian seasoning.
Place your shanks on the smoker and cook for 1.5-2 hours or until the crust has set and they have nice color.
Heat 2 tablespoons of olive oil in a dutch oven. Add the onion and garlic. Saute for 2-3 minutes until aromatic. Add in carrots and celery and cook for 5 minutes.
Add in your tomato sauce, Rosso Dolce, beef broth, rosemary, bay leaf and thyme. Stir to combine and incorporate everything. Place your smoked shanks into the pot and cover. Place your dutch oven back onto the smoker or into the oven. Cook at 300 degrees for 3 hours or until shanks are fork tender.
Remove your cooked shanks from your braising liquid and set them aside. Remove rosemary and thyme stems from braising liquid and place the dutch oven on the stove over medium heat. 7 Bring the braising liquid to a simmer and let cook for 5-10 minutes to reduce and concentrate flavors. You can use a stick blender to emulsify everything if you’d like. Season to taste with salt and pepper.
Serve lamb shanks over polenta, risotto, mashed potatoes or by themselves if you’d like. Pour the sauce over the top, garnish with fresh parsley and enjoy! Serve with a nice glass of Rosso Dolce to really set it off!!
