Ostrich buffalo wings 🔥If you haven’t figured it out by now I love exotic meats and ostrich is one of my favorites! These wings hit hard and exotic food lover or not, these smacked! You ever had an ostrich wing before?!?!??
INGREDIENTS
4 ostrich wings (shanks)
3 tablespoons “Pitmaster Privilege” rub
6 cups beef broth
1 bottle “Bear and Burtons Everyday Special Reserve Hot Sauce” or buffalo sauce of choice
8 cloves garlic
1 sprig rosemary
1 tablespoon olive oil
3 cups seasoned flour
6 cups frying oil
RECIPE
Coat your ostrich wings in olive oil as a binder. Apply “Pitmaster Privilege” rub, or rub of your choice to the meat. Place them on the smoker at 225 degrees and smoke for 2 hours.
After smoking for 2 hours, place ostrich wings into a dutch oven. Add in garlic cloves, rosemary and then add in enough beef broth to cover your ostrich. Place the lid on and return the smoker. Let your ostrich shanks/wings braise for 2.5-3 hours or until tender.
Remove your ostrich shanks/wings from your braising liquid and place them into your seasoned flour mixture. Press the meat into the flour and turn to make sure every inch is coated.
Fry the shanks/wings in a fryer heated to 375 for 2-3 minutes until crispy. While the shanks/wings are frying, pour your hot sauce into a small saucepan and warm it up. When your shanks/wings are done, place them into a bowl. Pour warmed sauce over the top and toss to coat. Serve immediately and enjoy!
